Breakfast sausage isn’t the first thing you think of when you think about veal, but if you shop at MyPride Farms and take home a package of his tiny, tender morsels you’re likely going to think about it more often.
Available in three varieties – with Mike’s original seasoning blend, a maple-flavoured version and in a gluten-free variety that’s sure to be popular with Market patrons – MyPride Farms’ veal breakfast sausages turned out to be delightfully tender and juicy without being greasy: definitely a change from more traditional pork sausages.
The veal, which has a fine grind on in that makes the sausages nice and dense, is milder-flavoured than pork tends to be; and seemed less salty than most of the commercial varieties out there. We enjoyed the hint of maple in the ones we sampled, which were bulked up just a little by wheat bread crumbs.
We fried ours in a pan and found that the little links obligingly rolled themselves around as they cooked and changed shape, making the skins nice and golden-brown all the way around.
